How to make your own coconut snacks

Ingredients: 1 cup fresh coconut (I used frozen coconut) 1/2 cup brown sugar (or agave syrup) 1 tbsp coconut oil 2 tbsp coconut flakes 1/4 tsp ground cinnamon 1/8 tsp ground nutmeg 1/3 cup plain coconut milk (I use almond) 1 tsp vanilla extract Directions: In a medium saucepan, combine the coconut, brown sugar, coconut oil, and coconut flakes.

Bring to a boil over high heat.

Reduce heat to low and cook, stirring constantly, for about 10 minutes.

Remove from heat, and let cool slightly.

Whisk the coconut milk into the bowl of a stand mixer.

Add the vanilla extract, coconut flakes, and cinnamon.

Mix on medium-low speed until combined.

Whizz the coconut mixture until it forms a smooth batter.

Use a spatula to coat the top of the coconut bars, and place on a baking sheet.

Bake for about 40 minutes.

Notes: I used frozen Coconut and it worked great!

But you can freeze the frozen chunks of coconut if you like.
